Well, technically you can either can it or freeze it. :)
I know I'm far too late for suggestions, but I'm a big fan of simply coring them, cutting them up (if necessary), and freezing them on a cookie sheet covered with wax paper. Then I bag 'em up and leave 'em in the freezer for later use in pies or what have you. That way they don't become a big frozen lump - you can shake out as many as you need.
